BANANA PUMPKIN BREAD

Feeling all the fall goodness with this banana pumpkin bread




It was rainy today on the island so we stayed inside and made the most of our day. I whipped together this quick bread which also made our home smell amazing! This bread makes me think fall and it's so great for a quick bite for breakfast, on the go while rushing the kids to school, or a perfect partner for your morning coffee and tea time night caps. Freeze it up to two weeks or share the love with others. Make it into muffins for an even easier grab + go snack. Either way mix it up and enjoy this tasty fall goodness!





INGREDIENTS:

2-3 over ripe bananas 1 1/2 cup all purpose flour

3/4 cup pumpkin puree 1 tsp baking powder 1 1/2 tsp cinnamon 1/2 tsp kosher salt

3/4 cup sugar 1/4 cup melted butter

1/4 cup brown sugar 1 egg

1 tsp vanilla extract 1 tsp pumpkin pie spice






Preheat oven to 350* and prepare your loaf or muffin pan by greasing first and set aside.


In a bowl mash bananas and sugars together until well combined. Next mix in melted butter, egg, vanilla, and pumpkin puree. Blend it all together until all is mixed. In another bowl combine your flour, baking powder, salt, cinnamon, pumpkin pie spice and stir that up. Once stirred add your flour mixture to your wet ingredients and whisk until well blended. Pour batter into your loaf or muffin pans and bake for 50-60 minutes or until you can touch the top and it bounces back or a toothpick comes out smoothly. Let it cool and enjoy! Pair it with some butter or jam or just eat it natural. My most favorite thing about fall is all the baked goodies! I hope if you make this it is enjoyed by all in your little bungalow!
